Believe it or not, you can have your cake and eat it too! As long as it’s the right sort of cake, that is.
Natural health gurus Andi Lew and Natalie Kringoudis have just realsed a fabulous new cookbook chock-a-block full of wheat free, dairy free, and sugar free dessert recipes. They are full of good fats that help you lose weight, stay thin, and feel fabulous.
Rather than tell you how good this cookbook is, we thought we’d show you with two recipes, Orange and Chia Seed Cake and Raw Chocolate Brownies, delicious enough to fool even the most dedicated sweet tooth and healthy enough to enjoy without even an ounce of guilt.
Ingredients –
2 oranges tops removed / cut and scored with a cross about 3cm deep
6 organic free-range eggs
250g xylitol
250g almond meal
3 ts baking powder
2 tbs soaked chia seeds
Method –
Place the prepared oranges in boiling water and simmer for 50 minutes.
Remove from the water and purée the whole orange, including peel in a food processor, until smooth.
Preheat the oven to 160 Celsius
In a large mixing bowl, mix the eggs and xylitol until light and fluffy
Add the almond meal and baking powder. Mix until combined
Stir in the orange purée and soaked chia seeds.
Pour the mixture into a 22cm cake tin lined with greaseproof baking paper. Do not use foil.
Bake in the oven for 40 minutes or until firm but still moist. It may need to cook for up to 50 minutes.
Leave to cool in the tin for about 5 minutes then turn onto a wire rack and cool there.
Note: This cake is a really wet cake and can stay fresh for a few days. It can be served warm with sheep¹s milk yoghurt dolloped on the side. The almond meal provides a gluten-free treat and once again high in protein. This is a twist on the traditional orange and poppy seed cake, but the chia seeds are very high in essential fatty acids. It¹s a great way of consuming chia seeds.
Ingredients –
3 cups of walnuts
1 cup of raw cacao
2 cups of pitted medjool dates
1/4 tsp salt
Method –
In a food processor, pulse walnuts until chopped roughly.
Add the cacao and salt and pulse several times to combine.
Add the dates one at a time until the mixture resembles breadcrumbs.
Line a tray with baking paper in a slice tin and pack mixture firmly inside, pressing down until it resembles a slice.
Set in fridge for 20 minutes.
Cut into small squares and sprinkle with cacao to serve.
Note: In its raw form, cacao is a super food high in many mineral and vitamins. It doesn’t end there – cacao is like an atomic bomb of feel good chemicals ready to explode on impact. No wonder you feel so good after eating one of these brownies! You could add so many ingredients to personalise these, such as freeze-dried strawberries or blueberries.
