There really is nothing quite as special as a Sunday afternoon with family, friends, tea, and something fresh from the oven. With Father’s Day looming and a multitude of birthdays to celebrate (is it just us or is this time of year birthday central?), we’re looking to impress with a classic tart that is as beautiful as it is delicious.
This French Apple Tart Recipe, contributed by diplomat, politician, and author Madeline Kunin to the cookbook One Egg a Fortune, is one of those that has made its way through generations — a true classic. It was handed down from Madeline’s French grandmother to her mother, and then on to Madeline herself.
It’s a true treat and definitely worth that extra session at the gym!
French Apple Tart Recipe
INGREDIENTS
PASTRY
60g butter
2 tablespoons white sugar
1 egg, lightly beaten
1 cup plain flour, sifted
½ teaspoon baking powder
pinch of salt
extra flour, for rolling dough
FILLING
1 egg
3 tablespoons white sugar
1/3 cup single cream
3 cooking apples such as Granny Smith,
peeled, cored and thinly sliced
METHOD
Preheat oven to 180°C. Line a 20cm non-stick spring form tin with baking
paper.
Make pastry: Cream butter and sugar until light and fluffy.
Add the egg and then flour,baking powder and salt.
Turn out onto a lightly floured surface, knead
gently and roll out to form a thin pastry to cover the base and sides of the tin.
Make filling: Arrange the apple slices in an overlapping spiral pattern in
the tin.
Beat the egg, sugar and cream together until thick and pour over the apples.
Press the apples gently down into the mixture. Bake for approximately 30–45 minutes until set.
