Ingredients
58g green tea noodles, uncooked
1 serve miso dressing, recipe can be found here.
1 cup of baby spinach
½ medium carrot, cut into matchsticks or grated
½ medium cucumber, cut into matchsticks or grated
3 celery sticks, thinly sliced
2 large spring onions, thinly sliced
100g grilled chicken breast, sliced
pinch (equivalent to ¼ tsp) sesame seeds
Method
Cook the noodles according to packet instructions, then strain and leave to cool.
Make miso dressing according to instructions here: (Combine the miso paste, mirin, and sesame oil in a small bowl. Whisk with a fork to combine).
In a large bowl, add the spinach, carrot, cucumber, noodles, celery, and spring onion. Pour over the dressing and toss well. Top with the sliced chicken breast, and sprinkle over sesame seeds prior to serving.
TIP: Green tea noodles are a variety of soba noodle, and can be replaced with an equal amount of soba noodles if unavailable at your local supermarket.
