Given that Australia Day is only days away, we thought it appropriate to share an amazing pavlova recipe that is as easy as it is delicious. You’ll be the belle of the BBQ with these in hand!
Ingredients
8 egg whites
pinch of sale
500g caster sugar
4 tsp corn flour
2 tsp white wine vinegar
1 tsp vanilla extract
750 ml whipping cream, whipped
passionfruit, berries, mangoes – you decide!
Directions
1. Preheat oven to 180 degrees celsius
2. Beat the egg whites and salt together until the mixture forms peaks. Gently add in the sugar a little at a time while still beating until the meringue mixture is stiff and shiny. Sprinkle cornflour, a few drops of vanilla, and the vinegar on top and fold to combine
3. Form round meringues on trays lined with baking paper, around 10cm across and 1.5cm high. Make an indentation in the middle of each with the back of a tablespoon – this is where your fruit will sit later
4. Put the trays in the oven and reduce heat to 150 degrees celsius. Bake for 30 minutes
5. Remove from oven and transfer them still on baking paper to wire racks
6. When cooled and ready to serve, dollop cream into the indentation then put whatever fruit you like on top and dust with icing sugar.
