After all those years your mother spent making you breakfast, packing your lunch, and cooking you dinner, there’s no better way to say thanks than with an assortment of gourmet goodies and a glass of bubbly.
Margot De Bortoli of De Bortoli Wines has shared two of her favourite recipes for you to cook this mother’s day. They’re simple, delicious, and the perfect accompaniment to a glass of bubbly.
Spinach and Filo Tarts
Makes approx 30
Ingredients
1 bunch spinach
80g melted butter
8 sheets of filo pastry
3 eggs
1 cup thickened cream
salt and pepper
90g tasty cheese grated
90g fetta
Directions
Wash spinach leaves, drain, snip off stems. Place into a covered pot over high heat until spinach has wilted.
Drain and chop roughly. Melt butter gently, brush onto pastry sheets, placing each on top of the last.
Cut 10cm circles in pastry and place in small muffin trays.
Beat eggs and cream together adding salt and pepper then add grated cheese and crumbled fetta.
Combine with spinach and spoon mixture into each pastry circle.
Bake in a moderately hot oven 200 C for 25 – 30 minutes or until risen and golden brown.
Salmon, Mascarpone and Dill Crepes
Makes approx. 30
CREPES
Ingredients
2 cups plain flour
480mL milk
4 eggs
salt and pepper
fresh herbs
Directions
Blend ingredients until smooth. Cover and set aside for 30 minutes at room temperature.
Using a fry pan, pour small amounts of crepe mixture in once hot.
Cook for approximately one minute until underside is golden, then flip. Cook the other side for another minute, then remove from fry pan.
Repeat.
Allow crepes to cool.
FILLING
350g mascarpone cheese
lemon juice
smoked salmon
poppy seeds
dill
Directions
Mix together mascarpone and lemon juice.
Spread onto crepes and top with smoked salmon, poppy seeds and dill.
Roll crepe, slice into 1cm thick pieces and serve.
