Rhubarb & Hazelnut Paleo Crumble Recipe
Ingredients
Filling
300 grams rhubarb roughly chopped
1 gala apple roughly chopped, core removed
300 grams mixed berries (frozen if need be)
200g coconut sugar
1 tsp vanilla extract or 1 vanilla bean
1/2 cup of water
Zest of 1 lemon
Crumble
2 tbs honey
1/4 cup coconut oil
1/2 cup of coconut flour
1 cup of hazelnut meal
1 cup of slivered almonds
Directions
1. Place rhubarb, apple, zest of lemon, water, vanilla and coconut sugar in a baking dish and bake at 180 degrees for 20 minutes until the rhubarb is soft, but still holding its shape.
2. Add mixed berries of your choice and set aside.
3. Mix crumble ingredients together, placing a layer of the mix over the fruit and bake for approximately 30 minutes on 180 degrees, or until golden.
4. Serve with coconut yoghurt and maple syrup!
