What better way to catch up with friends or family than over a delicious, home baked slice of cake. This pear and hazelnut cake is one of our favourites because it’s simple to make and packed with flavour – every bit the indulgent treat a slice of cake should be.
Pear & Hazelnut Cake
(Serves 10)
Ingredients:
1 ¼ cups plain flour
2½ tsp baking powder
¾ cup caster sugar
¾ cup ground hazelnuts
Finely grated zest and juice of 1 lemon
1 cup Sanitarium Fibre Start
1/3 cup vegetable oil
1 egg
2 ripe pears
½ cup chopped hazelnuts
¼ cup brown sugar
Method:
- Preheat oven to 190C or 170C fan. Grease a 23cm springform pan.
- Sift the flour and baking powder into a large bowl, then add caster sugar, ground hazelnuts and lemon zest. Stir to combine.
- Mix together FibreStart, oil and egg in a separate bowl then add to dry ingredients and mix until just combined.
- Pour the mixture into the prepared pan and bake for 10 mins.
- Meanwhile, peel and core the pears, and cut into thin wedges. Place these in a bowl with lemon juice and toss to combine.
- Drain pears and arrange over cake batter, then scatter over the combined chopped hazelnuts and brown sugar. Bake for another 25-30 mins, until a skewer inserted into the centre comes out clean.
- Cool in pan for 5 mins. Remove from pan and cool completely.
