These Santa Hat Brownie Bites are a fun and simple way to get into the festive spirit and provide a delicious treat for all your family and friends! Plus they’re just super cute right?

Santa Hat Brownie Bites Recipe
Adapted from Erica’s Sweet Tooth and Daisy’s World
Shopping List:
– 1 packet of your favourite brownie mix plus associated ingredients required for the pack of your choice. (If you have a recipe from scratch you love to use even better!)
– 1 round cutter (to cut brownie slab into desired shape)
– 2 punnets of Strawberries
However first before you hit the shops you will need to decide which topping variation you want to go with to simulate the white trim on the santa hats.
This is what you will need to add to your shopping list depending on each variation:
For Vanilla-Mascarpone Buttercream Trimming:
– 1/2 cup (1 stick) unsalted butter, room temperature
-230g mascarpone cheese, room temperature
-2-1/2 to 3 cups powdered sugar
-2 teaspoons vanilla extract
-pinch of salt
– piping bag
For White Chocolate Trimming:
– 1 packet of white chocolate buttons (for melting)
– piping bag
For Whipped Cream Trimming:
– 1 can of your favourite whipped cream
Method:
– Bake brownies according to packet instructions.
– Whilst waiting for brownies to cool, wash and hull strawberries so bottoms are flat.
– Use round cutter to cut brownie slab into desired shape.
– Place strawberries on top of brownies. Press down so they stick.
For Vanilla-Mascarpone Buttercream Trimming:
– Using an electric mixer, beat butter and mascarpone cheese until light and creamy, about 2 minutes. Add vanilla extract and salt. Add 2 1/2 cups of sugar, half a cup at a time and continue beating until smooth.
– Add more sugar, if needed to reach desired consistency and sweetness.
– Transfer mixture into piping bag and pipe a ring of buttercream around the strawberry, adding a dot to the very tip to replicate a Santa hat!
For White Chocolate Trimming:
– Melt white chocolate in a double boiler.
– Transfer mixture into piping bag and pipe a ring of white chocolate around the strawberry, adding a dot to the very tip to replicate a Santa hat!
– Expert tip: Work quickly, the white chocolate can dry fast and clog up the tip of your piping bag!
For Whipped Cream Trimming:
– Shake can and apply ring of whipped cream around the strawberry, adding a dot to the very tip to replicate a Santa hat!
