Spicy Thai Corn Soup
Serves 6
Ingredients
Method
1. Place stock, coriander, galangal, ginger, kaffir lime leaves and chillies into a blender. Blend for 1 minute or until smooth.
2. Add coconut cream, creamed corn, fish sauce and lime juice. Blend for another 30 seconds.
3. Serve soup warm with coriander to garnish.
